Harvested primarily from the Laundry Lakeshore Vineyard, then wild fermented in an open top oak vat, after which it is aged for 12 months in oak.
This Merlot is Certified Organic and Biodynamic, no mean feat in Canada where conditions are tough, however Southbrook strives to produce the best quality wines possible, 100% hands-on, in small batches and barrel lots. They allow a long development time for each wine before releasing it.
They are one of less than a handful of Biodynamically certified vineyards in Canada and forging the path for new ways to grow in an ecological manner for cold climate viticulture.
A rich merlot with silky smooth tannins, the age is prominent and softens the oak use nicely.
The wine is in its absolute prime, offering purple fruit and plums along with sweet spice from the oak and tertiary aromatics.
