Big Banyan are utilising sustainable practices, applied where viable, such as using local chicken guano & cow dung for composts.
An indigenous clonal variety of Dogridge rootstock was used for the vines. This rootstock is especially adapted for Indian drought resistance, adding another layer of sustainability to the farming.
Approximately 80% of the wine is fermented in stainless steel tanks over fifteen days, preserving the varietals' hallmark floral aromatics and stone fruit character.
The remaining 20% is fermented in French oak barrels for one month, adding a layer of spice, body, and textural richness before the two portions are artfully blended.
The wine is aged in tank for one year, followed by a further three months of bottle maturation. This allows the various elements to harmonise fully, resulting in a wine of notable depth and aromatic complexity at the time of release.
An intriguing expression of Viognier, blending fruit harvested from Big Banyan's own estate vineyards in Bangalore, along with Viognier grown in the cooler elevations of the Nashik region.
The interplay between these two distinct terroirs lends the wine both intensity and finesse.
