Hand harvested grapes, destemmed and directly pressed.
The Semillon fermented in new 500L Marsannay barrels, while the Moscatel was fermented in stainless steel tanks for about 25 days under controlled temperature conditions. After fermenting the wine was aged in steel tanks for 11 months prior to bottling.
The wine was also put through oxidative wine-making practices to bring about complex savoury, nutty and bruised apple notes.
Sulphites are a natural biproduct of fermentation. As a fermented product, this wine contains sulphites.
