The winery that was set up by Lefteris Glivanos who has a focus on the native varieties of Debina (white), and Vlachiko (red) and Mpekari (red).
The creation of “Paleokerisio” (translated to ‘Old Times’) wine is the most prominent example of the revival of a traditional wine - the famous semi-sparkling wine produced in Ioannina since 1600AC.
It is made in the old style of the region. This means the grapes are fermented on their skins (10-12 days) and in oak.
The wine is semi-dry and semi-sparkling. But the viticulture is not certified organic, and the second fermentation is in tank, so its production is maybe not quite as old-style as you might think. Nevertheless, it is interesting and, more-importantly, delicious. The small percentage of red grapes seems to give the amber color a ruddy tinge.
Sulphites are a natural biproduct of fermentation. As a fermented product, this wine contains sulphites.
